The default shade of the Elegant Formal Dress matches the skin tone of the horse fairly well, and strangely the black background of the cloak combined with orange dye creates a nicely matching brown. The circlet is an attempt to link the outfit to the sea blue gems on the tack.

My dwarf guardian has the Pale Golden Summer Pony, and in his case I selected the horse to go with the outfit. He's just in his upper 20s, and ran some tankings of GB to get enough Barrow marks for the full Barrow-warrior heavy armor set. I found that with a yellow dye, the full armor took on a golden hue, and while it's more of a yellow gold than the horse's tack, it really goes well together.
